The Surprising Effect of Protein on Blood Sugar
Most people know that carbohydrates raise blood sugar. Fewer realise that protein does too, via a process called gluconeogenesis: the liver converts amino acids into glucose when carbohydrate intake is low or when insulin signalling is impaired.
This effect is subtle in healthy individuals but becomes clinically significant in people with diabetes or insulin resistance โ which is why the simulator models protein intake separately from carbohydrates.
